A little pan fried red mullet served on sliced carrot & courgette with moules mariniere.
Dipped chocolate truffles with coloured sugar crystals/chilli sugar and macaroons I made, the blue is peppermint, the green is elderflower, red is rose, and yellow is vanilla.
Another dessert I made; deconstructed blackcurrant delice wrapped in light jaconde sponge with chocolate drizzled tuille wafers, blackcurrant coulis and blackcurrant jelly jewels x
Oven baked sustainable cod fillet, served with fresh tomato, basil and olive fusilli, tossed with garlic french beans.
